Veggie Burger Recipe
I never really liked burgers much before going vegan, but once I discovered veggie burgers my mind changed a bit!
Veggie burgers are so amazing because they can be made out of all kinds of different things. This recipe is whole-food, plant-based, and used a lot of leftovers from my fridge- which is always a plus!
All you'll need is one steamed sweet potato, a can of black beans, a small onion, any kind of rice or quinoa, some oats/ oat flour- or flour of your choice- and a ton of spices!
1 large sweet potato, steamed, skin removed
1 can of black beans, drained and rinsed
1 small onion
1 cup of brown rice or quinoa (cooked)
1- 1 1/2 cups of oats
2 tsp garlic powder
2 tsp chili powder
1 tsp red pepper flakes
1 tbsp burger seasoning
1 tsp black pepper
salt to taste
Makes about 8 burgers depending on size of sweet potato
How to Make:
Begin sauteing the small onion on medium heat with a little oil or water, cook until very soft.
While the onion is cooking, go ahead and put the oats into a blender and blend until it becomes a semi-fine flour. You can use any flour of your choice for this, I just find that oats work really well.
remove the skin from the sweet potato and add to a bowl with the drained and rinsed black beans.
Begin mashing the sweet potato and black beans with a potato masher
add in the onions, and rice, and continue mashing
add in the oat flour and spices. taste and adjust spices to taste. You may need to add more oat flour, just make sure the mix is pretty dense, enough so to form a patty.
Cook the patties in a frying pan with a little bit of oil until cooked all the way through, or place the patties on a baking tray and cook in the oven on 375 for about 20 minutes, checking periodically.
I served mine up with some fresh lettuce from the garden, tomato, avocado, and vegan mayo!
